Know your Chocolate!

There is so much to learn about all the ingredients we use in our divinely handcrafted creations, so here is an info bite on the topic of chocolate! 

Did you know that we use only the finest dark couverture chocolate? 

Whenever you see 70% Belgian Dark Chocolate in the product ingredients, it means the following: 

  • The chocolate used in the product is couverture chocolate
  • Couverture chocolate is a very high-quality chocolate that contains a higher percentage of cocoa butter
  • The chocolate is sourced from Europe
  • The chocolate is plant-based and even though cocoa butter sounds like a dairy ingredient, it is actually the fatty portion of the cacao bean, and is naturally dairy-free.
  • The term "couverture chocolate" is distinct from compound chocolate. Products that contain compound chocolate have a lower percentage of solids and may contain non-cocoa fats like vegetable oil, palm oil and milk solids
  • Couverture is used by professionals for dipping, coating, molding, mixing and garnishing
Our chocolate contains the following ingredients:  

Cocoa mass, sugar, cocoa butter, emulsifier: soy lecithin, vanilla extract with a minimum of 70% cocoa.

Sugar! Except for the sugar in the chocolate itself, no other refined sugars are added to our products. We use dates, sultanas, apricots and raw honey as an alternative to refined sugar. 

Two of the products in the Vitality range contain raw cacao that is sourced from Peru. The difference between cocoa and cacao is that cocoa is a chocolate powder made from roasted and ground cacao seeds, while cacao refers to the plant itself and the products are made from non-roasted seeds (cold pressed). The standard terms are cocoa butter and cacao bean
